The Mediterranean diet, recognized as an intangible cultural heritage of humanity by UNESCO, has been highlighted for its health benefits, including reducing the risk of cardiovascular disease and other chronic conditions. The study was carried out on 164 university employees, and an adapted questionnaire was used to evaluate adherence to the Mediterranean diet. The results showed that approximately 50.6% of the participants had moderate adherence to this diet. However, a low consumption of fish, nuts and wine, key elements in the Mediterranean diet, was found. In addition, insufficient consumption of fruits, vegetables and legumes was observed. Regarding nutritional status, 57.9% of the participants were overweight or obese, and 61.6% had an increased to high cardiovascular risk. No significant association was found between adherence to the Mediterranean diet and nutritional status or cardiovascular risk in this population. Comparing these results with studies carried out in other countries with a more established Mediterranean diet, significant differences in food consumption patterns stand out. The availability and cost of certain foods, such as fish and nuts, could be limiting adherence in this Paraguayan population.
